Papaya Payasam(Kheer)–Navarathri Recipes(Day 3)

Third Day of Navarathri –Papaya Payasam(Kheer)

My mom make it in our childhood days  and we all love eating it.. Those who do not like papaya will also enjoy eating this so u go ahead and try this wonderful recipe.The papaya fruit is a rich source of antioxidants and an enzyme that aids in digestion.This papaya has an excellent source of Vitamin A, B, C.Papaya, is very rich in vitamins ,minerals & fiber.None can say 'no' to this delicious dessert.So,do give this a try and enjoy your festival days.

Ingredients

  • Ripe papaya -1 medium(masked with fork)
  • Coconut milk(thick) -1/2 cup
  • Coconut milk(thin) -1 ½ cup
  • Jaggery -1 cup
  • Milk- 2 cups
  • Cardamom powder –pinch
  • Ghee -1 tbsp
  • Nuts -1/4 cup
  • Dry ginger powder -1/2 tsp

 

 

Method

1. Wash,peel and cut the papaya.Keep the papayas in a pan with 1 cup water and let it cook on medium flame covered. Cook for about 10-15 minutes, until the fruits become soft and mushy.


2. It may take 15-20 minutes.If the water dries up,add half of the thin coconut milk.melt the jaggery in half cup hot water.Strain the impurities,keep aside.


3. Add the remaining thin coconut milk in the cooked papaya.Slightly mash the papaya pieces.Let it cook for few minutes till the kheer gets thick..Keep stirring in between so that it doesn't stick to the bottom of the pan.


4. Heat another pan and add ghee.Fry the cashews followed by raisins,add it to the kheer.Add the cardamom powder and dry ginger powder.Lower the flame to low heat.
Add the thick coconut milk,llet some appear at the surface.Switch off flame.



Serve warm or cool !!



Notes
I have used fresh coconut milk.Add some almond paste for extra richness.
Boil milk on low flame and stir in between to prevent burning from surface.
